Apart from the obvious numbers on the crank cases, the 350 has an 81mm mouth compared to 80mm of the 250, apart from that they are the same.

The narrowcase Sebring 350 head is the same as the Monza 250 apart from the squish being machined differently. The Sebring is machined to 76mm at 40 degrees and the Monza 250 machined to 74mm at 45 degrees. Internals are the same.

Top Bevels are also different in the Sebring being longer, same length as a W/C 250.

Regarding the 350 Sebring parts book it is rare in the UK and I don't have a copy either, so I have to make do with the 250 N/C and the W/C sebring books. The best hope is to find a source in the US.

I have also never seen a copy of the late W/C models (Blue and gold Mk3's and Yellow and black desmo's) I have a semi complete hand drawn/cut and paste version, but that's it. If a factory one exists, that would be a find and worth copying.
